Margarine is the product which obtained by blending of vegetable oil, part of animal oil, water and additives, with the character of cognitive plasticity. Now the margarine has been used as the substitute of the natural butter of milk, and widely applied in food industry.
Shortening oil is obtained by quench and kneading of animal and vegetable oil, hydrogenated oil after refining, with the solid-state, and no quench and kneading, with the solid-state and lipid-state. Because of its cognitive plasticity and emulsifying property, it has been applied in the processing of pastry, bread and fried food.
